RECIPE: Yellow Pepper and Purple Cabbage Red Lentil Pasta

So guess what peeps?  The Happy Earth People red lentil pasta is absolutely divine.  It doesn’t taste like lentils at all!  Not that I don’t like lentils but I just don’t like my pasta to taste like lentils.  And these taste and feel like pasta in your mouth.  And the flavours in this recipe suits it so well.

This is my own recipe made with what I had available in the kitchen.  It took me 10 minutes to make so it would be perfect for a quick dinner for the family.

Serves 4.



Cook the red lentil pasta according to package instructions and drain.

In a separate pot, fry your chopped red onion, purple cabbage, yellow pepper and cherry tomatoes for a few minutes.

In a separate bowl, mix together your two eggs, the grated mozzarella cheese and your brewers yeast.

Chuck your drained pasta and veggie mix into the eggs mixture and mix to combine.

Season to taste and top with your Earthshine onion rings.

Serve and enjoy!


Assuming you already have salt, pepper, oil and brewer’s yeast in your cupboard, the recipe will cost you R232.  But you will have a lot of leftover ingredients to use for another meal!  This is what I paid for my ingredients:
